Double Decker Quesadilla Recipe
I <3 quesadillas. I never really tried them until a year or two ago, and now I am in love. I love all kinds of quesadillas (except spicy ones). Especially this one. I love hearing the kids get excited over what’s for dinner, and this is one of those. (Well, one didn’t like the beans, but everyone else did). The other thing I love about this recipe is that it’s so quick and easy! I doubt it took me any more than 20 minutes to make it, if that (with the chicken already cooked).
We had to double this recipe, because it only makes six slices, and for our family of six, that’s just not enough. But for a family of three or four, one quesadilla would probably suffice.
So, let’s get down to it.
Here’s what you need:
- 8 oz. Mexican-blend shredded cheese
- 15 oz. black beans, rinsed and drained
- 7 oz. canned corn, drained
- 2/3 c. salsa (we use mild)
- 9 oz. (give or take) boneless, skinless, chicken breasts OR 9 oz. pre-cooked packaged boneless, skinless, roasted chicken breast
- 3 10-12 inch flour tortillas
Here’s what you do:
- If you are preparing your own chicken, slice and boil until meat is cooked through.
- Place one flour tortilla on a serving plate.
- Sprinkle 1/2 c. cheese on top of tortilla.
- In a bowl, combine black beans, corn, and 1/3 c. salsa
- Spread bean mixture onto tortilla.
- Sprinkle 1/2 c. cheese on top of bean mixture.
- Top with flour tortilla.
- Sprinkle another 1/2 c. cheese on top of tortilla.
- Combine sliced chicken breasts in another bowl with remaining 1/3 c. salsa.
- Add chicken mixture on top of cheese.
- Sprinkle with remaining cheese.
- Top with flour tortilla.
- Microwave for 10 minutes at 50% power.
- Slice and serve.
