Mom’s Amazing Mashed Potatoes
Before I begin, I have to say this recipe is by no means new around our house. My mom has made these potatoes ever since I can remember. I’ve been making this dish since college, and it’s always a great success with everyone who tries it (well, except for Princess Anna, but we don’t count her when we talk about food-ha!). It wasn’t until recently, however, that I actually sat down to make a paper recipe out of this idea though. This is one of those fly-by-the-seat-of-your-pants recipes that I just had to post, and telling you to dump some butter in and a little bit of salt just won’t cut it. So I actually put a recipe to it, and oh my goodness they were better than ever! As always I won’t waste your time. Just enjoy!
Here’s what you need:
- 8 small potatoes
- 1 1/4 c. milk
- 1/4 tsp. pepper
- 1/2 Tbsp. salt
- 1/2 c. butter
Here’s what you do:
- Rinse and peel all potatoes
- Cut potatoes into 1-inch cubes or smaller
- Add all potatoes to large pot
- Add enough water to just cover the top layer of the potatoes
- Bring to a boil
- After water has begun to boil, cook for 10 minutes or until potatoes fall apart easily when poked with a fork
- Drain
- Return potatoes to pot or pour into mixing bowl
- Add remainder of ingredients
- Beat with electric mixer for 3-5 minutes on medium speed
- Serve
