Thursday Recipe: Cheesy Potato Soup

I am so excited for next Thursday, because one of my favorite recipes is on the menu!  I posted this last year around this time, but I don't believe you can post this recipe too many times.  It is SO good!  And next week I am making it especially for my sister, who will be in town and hasn't tried it before.  Not only that, I'll also be making bread bowls to go with it, which only makes the yummy goodness even better!  Now I'm making myself hungry... This is a great recipe for a really cold day--especially if you…

SO Easy Crockpot Applesauce

Okay, so I just have to say, first of all, that this is one of the easiest recipes you'll ever use.  I'm not kidding. Now that that's said... ...we were given free reign of a box of apples the other day.  Actually, we are fortunate enough to have this opportunity just about every week, but Princess Anna has a habit of eating the apples before I can make any applesauce out of them!  This time, I snagged six just for applesauce making. Cheesy Potato Soup

I don't know how the weather has been for you, but it's been bitter here--cold, snowy, icy...you name the winter weather, we've got it.  I'm well over it by this point, but what can you do?  On Thursday, we beat the cold with some hot yummy goodness called Cheesy Potato Soup.  I pinned this recipe from Lil' Luna quite a while back, and Thursday was the second time I made this.  This is one of my family's very favorite, and I swear I could probably eat five bowls of this stuff if I weren't trying to lose weight.  They're even better in…

Homemade Lemonade

So since we planted our garden Sunday instead of making homemade lemonade, we saved the lemonade for yesterday. On Sunday evening, when I went out to purchase our vegetable seeds and two more packets of flower seeds, I went ahead and picked up 12 medium-sized lemons for this recipe. Here's what you need for a regular batch of homemade lemonade: 1 c. water 1 c. sugar 6 medium-sized lemons 3-4 c. cold water Yes, I intended to keep the water measurements separate. Here's what you're going to do: Cut the lemons in half. I went ahead and did this first…

Bean and Cheese Quesadillas

Here's another recipe that we had recently.  I found this one at Parents magazine. Ingredients:  1 tablespoon olive oil  1 small onion, finely chopped (we used half of a large one, because that's what we had) 1/2 small green pepper, seeded and chopped (we only had a large one, so I just used half of that) 1 15 ounce can black beans, drained and lightly mashed 1/2 cup lower sodium salsa 1/2 teaspoon chili powder 1 package (10-count) fajita-size flour or whole-wheat tortillas (I made two quesadillas with whole wheat tortillas and one with flour tortillas) 8 ounces reduced-fat pepper Jack cheese, shredded (we didn't have any, so I used 4 ounces of Mexican blend cheese…
